Bourbon insiders have long acknowledged that full proof bourbon has a distinctively rich flavor. This bourbon underwent a distinct filtering process, forgoing the typical chill filtration, and only passing through a plate and frame filter. This allowed the bourbon to maintain a robust proof for bottling, as well as a full rich and bold flavor. Bottled at its original 125 barrel entry proof, just as it was years ago when the barrels were first filled, 1792 Full Proof Bourbon is exceptionally distinct.

Description

These 1792 full proof barrel select is typically a small batch, proofed release from Barton in Kentucky. Bottled at 125pf, it is hard to tell what the original barrel proof was for these releases, but all the same, 62.5% ABV isn’t a bad number to run with. This is very similar to Knob Creeks Single Barrel Reserve, which is a release consistently diluted to 60% ABV and I like those all the way from fine to amazing. In this series, I’m comparing a variety of Single Barrel releases from the Full Proof lineup, selected by various stores, vendors and societies in the USA.

Color

Burnished Copper

Nose

There is a fair amount of ethanol present, but it does not completely overpower notes of rich vanilla, caramel, rye spice, heavy oak char, and some pleasant hints of fresh pear.

Palate

The mouthfeel is pleasant but average, despite the long, slow legs that form in the glass. A sharp rye spice dominates initially and ushers in plenty of alcohol burn. However, despite the burn this bourbon is surprisingly sweet on the palate, revealing notes of sweet corn, vanilla, dark fruit, and oak char.

Finish

The finish is long and hot. Through the heat, there is some peppery rye spice, caramel, musty oak, and a pronounced note of stewed pears that culminates in a somewhat bitter finish.

Kentucky– This hand selected barrel produces a deep rich amber color.1792 is full bodied with notes of cinnamon and pepper and lots of brown sugar and hints of maple. Long spicy finish that brings out oak, baking spices, and a dark fruity sweetness.
